TAD day 6 Tiramisu Cheesecake

Tiramisu cheesecake


Today I cooked a meal for my parents:

Chicken stuffed with garlic cream cheese, wrapped in parma ham
with glazed carrots, roasted new potatoes, and creamed leeks
(I didn't take a photo of this as my parents like their vegetables cooked until they no longer resemble vegetables (and how attractive are khaki leeks?!!)

Followed by a Tiramisu cheesecake.

Apologies for the poor picture.

The cheesecake has the following ingredients:

Digestive biscuits (amaretti biscuits go well but Dad doesn't like almonds!)
butter
Mascarpone cheese
Ricotta cheese
icing sugar
sponge fingers
Marsala wine
coffee
cocoa powder for dusting

Crush digestive biscuits and mix into melted butter. Squash into case and leave to set hard in the fridge.
Mix together mascarpone and ricotta with sifted icing sugar.
Mix tablespoon instant coffee with a little hot water. Leave to cool. Add marsala wine.
Dip sponge fingers into coffee and marsala and put to one side.
Put half of mascarpone and ricotta mixture on to digestive base.
Place a layer of soaked sponge fingers.
Layer the other half of cream cheese mix on top.
Refrigerate for at least 30 mins
Dust with cocoa powder before serving (or in our case, drinking chocolate powder as no cocoa in the house!)

I made three small individual cheesecakes.
