Summer Thing A Day 2010

 

In a few days August will be here. Maybe this is the time to take vacation before the kids go back to school and summer Fridays at the office wind down. Hopefully, the month will bring cooler temperatures in New York City. Even if the weather Gods disagree, August is the time for Summer Thing A Day (STAD). Like Thing A Day, held annually during the month of February, the goal is to actively create something on a daily basis. Click here to see projects from STAD 2009. EMERGENCY HELP!!!

Hello

 How are you doing? I'm writing this with tears in my eyes we had a visit  to London (United Kingdom) unannounced some days back, Unfortunately we got mugged at gun point last two nights. All cash Credit card and cell phones were stolen,It was so traumatic.Thank God we have our life and passport saved,we have been to the embassy they are not 100% helpful so i concluded  that returning back home will be the best option.we also have limited means of getting out of here,as we have canceled our cards So i won’t get a new card till i get back home.I really need your support & assistance as my flight leaves in few hours,but i have problems checking out of the Hotel,as i need to sort out some bills, Wondering if you could loan me some bucks to sort out the hotel bills and also take a cab to the airport,i wait to hear from you

Collage Series Thing

This is another one of soon to be 25 collage pieces that I completed. The idea of them began with the muck and grunge of the Metro in New York.

Has anyone seen the Chambers Street station?! It’s amazing! If anyone is in the area you should check it out before they renovate! (If you are into that sort of… thing.)

Wasp Nest...full picture

Was told my previous post photo of the wasp nest was somewhat confusing....so here's a photo I took of the entire nest:)

My husband spotted this nest while we were driving through Twin Bridges, Montana.  It was growing in the tall grass on the side of the road. It was 'uninhabited'...so he collected it for me. I found it fascinating as you can see where the wasps used leaves as material for their nest! I tried getting a good picture of the honeycomb texture inside..but the photos keep coming out blurry.... I'll try again later.  Have a great rest of the week!

making mozzarella

I finally tried out Ricki Carroll's famous 30 minute mozzarella recipe. The link is actually a bit different than the abridged version taken from Barbara Kingsolver's Animal Vegetable Miracle. Next time I'll allow the curd to come to the top and cut it before transferring it to the microwave. 

I made a half recipe--used one half gallon of whole milk which yielded about a half pound of cheese. 

I started with three of four total ingredients: whole milk (from Apple Valley), vegetable rennet (purchased from Wegmans), and citric acid. The fourth ingredient is cheese salt, but I used kosher. Healthy Grocer is the only place that I could find real citric acid. Some sites say you can substitute fruit fresh (a fruit-canning preservative), but it's mostly ascorbic acid. Still, that is available at the local Giant, while citric acid is not. When you visit Giant and ask for it, they'll only lead you to metamucil.

heat the milk to 55 degrees then add the citric acid solution of 3/4 tsp in 1/8 cup of water.

immediately after adding the citric acid it looked like this. Stir and heat to 88 degrees then add the rennet.

The rennet solution causes the separation. Heat to just above 100 and then turn off the heat.

Here's where I could have let it sit and form at the top. Instead of using a slotted spoon to gather the curds, I used a sieve. The process went much faster this way than by scooping. 

Transfer the curds to a microwaveable bowl and zap it for a minute. Then knead to distribute the heat.

Then back in the microwave for 35 seconds and knead again. This is where you add the cheese salt--I used kosher and it seems alright. Back in the microwave for another 35 seconds and by now, it ought to be taffy-like. Separate and form into balls and put in ice water for a half hour.
